kitchen pc

I've been planning on building a kitchen pc for awhile now. Its going to take some time though. Im moving into a new house this weekend and it looks like most of the desposible income will be spent on things we need immediatly, then baby furniture for the new johnson that will be arriving soon. Hopefully i can flush out the plans here, understand my requirements, and attempt to purchase everything at a reasonable price.

My main goal for this kitchen computer is to be able to check my ical, browse the web, watch tv and listen to music. It needs a touch screen . I do not want a keyboard that badly.

Ive seen some car setups using a macmini that seem to be what im looking for. Id like to keep it apple based. Every other computer on the network is a mac. Why mess with something thats working already.
